Explore the artisanal range of tequilas and mezcals from a carefully curated list to offer you a sensory experience of these spirits. Each tequila and mezcal offers a journey through time, culture and craftmanship, making it more than just a drink.

Sipping tequila or mezcal, allows the intricate flavours to unfold on the palate. The ritual includes taking in the aroma’s which is an interplay agave and the land from which it originates and the influence of smoke for mezcal.

Clase Azul Tequila Reposado

A symbol of Mexican tradition and culture. Made with slow cooked 100% Blue Weber Agave, this tequila is unique and incomparable. Masterfully aged for 8 months in American whisky casks imparting its unique hazelnut and vanilla flavours leading to an exceptionally smooth finish. It’s decanter, the recognised icon bottle is hand painted by Mexican artists, making each bottle unique.

Gran Patron Burdeos

Crafted in very limited quantities from the finest 100% Weber Blue Agave grown in the Highlands of Jalisco. Twice distilled and aged in American and new French oak barrels, it is then finished in vintage Bordeaux wine barrels, which impart a dark amber colour and a taste that’s velvety smooth with hints of vanilla.

The Lost Explorer Salmania

The Lost Explorer mezcals are handcrafted spirit celebrating the earth and elevating the soul to sip curiously. Hidden in the sun scorched sierras of Oaxaca, Mexico, ritual self-sacrifice is taking place. It involves pits of fire and men with machettes. The Lost Explorer Salmania is the most herbaceous expression of all, offering a sweet and spicy profile with hints of green chilli, grapefruit and fresh agave.

Pescador de Suenos Pechuga

This is the most unusual type of mezcal, aged for 8 years and is crushed organically by a manual wooden hammer, made by redistilling spirit along with a mixture of wild fruit and a whole chicken breast. The combination of flavours help soften the smoke and power of the mezcal and produces a unique and delicious spirit. A soft sweetness comes through, followed by ripe green fruits, leading to a mouth-watering, freshly baked agave finish.

We have made it Carmen’s mission to create a cocktail menu that is as close to zero-waste as possible and our dedication to sustainability has led us to embrace different techniques. From this we can reduce our reliance on energy intensive food production methods as well as transport in turn reducing our overall carbon footprint. To support our efforts, we are dedicated to exploring new techniques for upcycling ingredients, with the goal of achieving 100% zero-waste.
